Hot n Spicy Chipotle Honey Ribs

Cooking in the oven prior to placing them on the grill makes these ribs tender and gets the job done much faster. Add a sweet n spicy sauce and you’re golden!


  • 2 racks of spareribs
  • 1 small jalapeño, sliced and de-seeded
  • 4 tablespoons honey
  • 2 tablespoons fresh minced garlic
  • 1 ½ tablespoons chipotle chili powder
  • 1 tablespoon fresh minced ginger
  • 4 teaspoons paprika
  • 2 teaspoon salt
  • 1 teaspoon ground black pepper

    For the sauce
  • 1 bottle stout beer or dark beer, such as Guinness
  • 3 cups BBQ Sauce of choice
  • ½ cup apple cider vinegar
  • 3 tablespoons Worcestershire sauce
  • 3 tablespoons honey
  • 2 tablespoons chipotle peppers in adobo sauce, chopped
  • 1 tablespoon stone ground mustard
  • 1 tablespoon lime juice 1 sweet onion, chopped
  • 1 garlic clove, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper


  1. Preheat oven to 275 degrees F.
  2. With a knife, carefully remove the membrane from the back of the ribs. Rinse and pat dry the ribs, and place ribs on a large, double layer of heavy-duty aluminum foil.
  3. Brush front and backs of ribs with honey.
  4. Combine chipotle chili powder, paprika, garlic powder, salt, and pepper in a small bowl, then rub mixture into both sides of the ribs. Dot the sliced jalapeños along the ribs, then wrap ribs in aluminum foil. Let sit at room temperature for 30 minutes.
  5. Place aluminum foil-wrapped ribs on a baking sheet and bake in the oven for around 2 hours and 30 minutes, or until tender.
  6. While ribs are in the oven, make the sauce. Place a saucepan or skillet on low heat. Add beer, BBQ sauce, apple cider vinegar, Worcestershire sauce, honey, chipotles in adobo sauce, mustard, chopped onions, garlic, cumin, oregano, salt, and pepper and bring pan to a boil. Stirring occasionally, reduce heat to low and allow to simmer for around 40-50 minutes, or until sauce has thickened. Remove from heat and set aside.
  7. Remove ribs from oven and let cool before placing on grill.
  8. Heat grill to medium-high heat. Remove rack of ribs from aluminum foil, set aside jalapeños, and brush both sides of the ribs with sauce. Place on grill meaty side down. Grill for about 5-10 minutes, basting every few minutes. Flip ribs, and grill another 5-10 minutes, also basting every few minutes throughout.
  9. Serve hot with leftover sauce, if desired.
