If you are counting calories or want a simple to make meal, I have the perfect recipe for you: taco soup. I make this at home for my family and it’s so quick and easy. It can be prepared in a crock pot or stove top.
1 pound ground turkey or lean beef
1 large chopped onion
1 (1oz.) packet taco seasoning mix
1 (16oz.) can pinto beans
1 (16oz.) can chili beans
1 (16oz.) can whole kernel corn
1 (8oz.) can Mexican-style tomatoes
1 (8oz.) can diced tomatoes
Brown meat and onions then drain excess fat. Mix in taco seasoning into meat. Add in beans, corn, tomatoes (don’t drain!!) and simmer 1 hour over medium heat.
Serve in soup bowls and top with broken taco chips and low fat cheese and sour cream.
