Beer-Braised Beef

Ingredients: 1 lb beef tips 1 large onion 2 cloves garlic 2 cans Guinness 1/2 cup water rosemary, thyme, salt and pepper to taste

Directions: In a large pot, heat 3 teaspoons vegetable oil. Season beef tips with salt and pepper and sear in pot on all sides then transfer to a plate. In the pot add thickly sliced onion and garlic, cook for 3 minutes. Add 2 cans Guinness, ½ cup water, a few sprigs of rosemary and thyme, salt and pepper. Bring to a boil then lower heat and return beef tips to pot. Cover and simmer on low for 2 to 3 hours, add carrots and green beans at this step if you’d like. Serve over mashed potatoes or egg noodles.
