New Appetizers featured at Hollywood Casino Amphitheatre

This past summer has been a blast! Not only have we catered to top musicians & bands, but we’ve also introduced several new unique appetizers to our menu. We’ve shared our fan favorites below, so you can impress your next big crowd!

Almond Crusted Goat Cheese Balls

These elegant cheese balls are easy to make and absolutely mouthwatering!

Ingredients

  • 4 oz goat cheese
  • 1/4 cup Whole Natural Almonds
  • 2 TBSP roasted shelled sunflower seeds

Directions

  1. Place sunflower seeds and almonds in a food processor. Or, crush by hand in a ziplock bag. The goal is to have finely crushed nuts and seeds for coating your goat cheese.
  2. Roll your goat cheese into balls, then roll each ball in the crushed almond mixture to coat, pressing gently to help as much of the mixture stick as possible.
  3. Place a toothpick in the center of each ball and serve.

Pepper Jack Cheese and Bacon Stuffed Cherry Tomatoes

These stuffed cherry tomatoes are cute, festive and absolutely perfect for your next party!

Pepper Jack Cheese and Bacon Stuffed Cherry Tomatoes

Ingredients

  • 25 cherry tomatoes
  • 4 slices bacon, cooked and crumbled
  • 3/4 – 1 cup shredded pepper jack cheese
  • 2 Tbsp breadcrumbs (plain or Italian)
  • 2 Tbsp olive oil

Directions

  1. Preheat your oven’s broiler and line a baking sheet with foil.
  2. Scoop out the insides of each cherry tomato with a small spoon. Lay tomatoes cut side down onto a paper towel so any remaining liquid or seeds can drain out.
  3. Stuff each tomato with cheese and bacon, about 2-3 pieces of bacon per tomato and about 1-2 tsp of pepper jack cheese.
  4. Place all tomatoes in the baking dish and drizzle with 2 Tbsp of olive oil. Sprinkle bread crumbs over the top.
  5. Broil for 3-4 minutes, or until cheese is bubbly and golden brown.

Voodoo Shrimp

Everyone always goes on and on about how delicious these shrimp are!

Voodoo Shrimp

Ingredients

  • 12 jumbo shrimp, peeled & deveined, tails left onMarinade
  • 1 cup + 3 ounces honey
  • 1 cup butter, melted (2 sticks)
  • 1 tablespoon Worcestershire sauce
  • 1 lime (juiced)
  • 3 ounces balsamic vinegarVoodoo Sauce
  • 1 cup sweet chili sauce
  • 2 ounces southern comfort liqueur
  • 2 sprigs cilantro, chopped
  • 1 lime
  • 1 tablespoon hot sauce
  • 3 ounces honey
  • 1 ounce sesame oil

Directions

  1. Mix marinade ingredients, place shrimp in marinade and let stand 1 hour.
  2. Meanwhile, mix VooDoo sauce ingredients.
  3. Grill or saute shrimp until done and serve with VooDoo Sauce.

Cajun Meatballs

For a simple meatball recipe, there sure is a heck of a lot of flavor here!

Cajun Meatballs

Ingredients

  • 1 pound ground beef
  • 1/4 cup yellow onion diced
  • 1 egg beaten
  • 1/4 cup milk
  • 1/4 cup quick cook oatmeal
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon cayenne pepper powder
  • Cajun hot sauce

Directions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a bowl and mix thoroughly.
  3. Form small balls (approximately 1″ wide) and place on a lightly greased baking sheet.
  4. Bake the meatballs for 15-20 minutes, or until cooked thoroughly.
  5. Serve with Cajun hot sauce for dipping.
