Herb and Garlic Roasted Brussels Sprouts

Servings: 6 servings
Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients:

  • 2 lbs Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/3 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Brussels Sprouts: In a large bowl, toss the Brussels sprouts with olive oil, garlic, thyme, salt, and pepper until evenly coated.
  3. Roast: Spread the Brussels sprouts in a single layer on a baking sheet. Roast for about 25 minutes or until they are tender and the edges are crispy and golden brown.
  4. Optional Cheese: If using Parmesan, sprinkle it over the Brussels sprouts during the last 5 minutes of roasting.
  5. Serve: Transfer to a serving dish and serve warm.
