Strawberry Puff Pastry Sandwiches

This yummy dessert is super simple to make and perfect for graduation parties!

Ingredients
1 sheet of thawed puff pastry sheet
1 stick butter, softened
½ cup strawberry preserves
½ teaspoon vanilla extract
¼ teaspoon grated lemon zest
¼ teaspoon lemon juice
2 cups confectioner sugar

Directions
Heat oven to 400 degrees. Using a 3-inch round cutter, cut the pastry sheet into 9 (3 inch) circles. Place the circles onto a lightly flowered baking sheet. Bake for 10 minutes or until golden brown. Remove from oven and let cool, then divide each circle in half leaving a bottom and top. Beat the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy.

Beat in the preserves, vanilla extract, lemon zest and lemon juice. Reduce the speed to low and blend in the sugar one cup at a time. Divide the strawberry mixture among the bottom pastry layers. Top with the top pastry shell and sprinkle with powder sugar. Makes 9 sandwiches.
