Summer Salads: Take Two

These quick and fresh summer salads are perfect for those hot and sticky days where you just want to lay out by the pool.

Fresh Broccoli Salad Directions
1) Cut broccoli into bite size pieces. Combine with bacon, onions, nuts and raisins.
2) Mix mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
Italian Bread Salad Directions
1) Pull apart or chop bread into bite size pieces
2) Combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough oil and vinegar to lightly coat, toss and serve. Top with mozzarella cheese.

2 heads fresh broccoli
1 medium red onion, diced
½ pound bacon cooked and diced (optional)
¾ cups raisins
¾ cups sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar
Italian Bread Salad Ingredients
1 pound fresh grated mozzarella cheese (optional)
1 pound loaf Italian bread
1 cup chopped tomatoes
1 cup cucumbers – peeled, seeded and chopped
1 cup diced red onion
1 clove minced garlic
2 cups fresh basil
1/8 cup chopped fresh thyme
¼ cup olive oil
2 tablespoons balsamic vinegar
