Back to School Lunches

It’s August and that means it’s back to school time! So I am going to give you a recipe to take to school and a snack for when they get home. – Bon Appetit! Larry G.

Turkey Roll-Ups Ingredients 8 ounce packet cream cheese this recipe will make 10 rolls ½ cup mayonnaise ¼ teaspoon dried basil ¼ teaspoon dried oregano ¼ teaspoon dill weed ¼ teaspoon garlic powder 10 (6 inch) flour tortillas 1 medium chopped onion 10 (1 ounce) slice cooked deli turkey breast 12 ounces shredded lettuce
 
Simple Balsamic Brochette 8 diced roma tomatoes 1/3 cup fresh chopped basil ¼ cup shredded parmesan cheese 1 tablespoon balsamic vinegar 1 teaspoon olive oil ¼ teaspoon kosher salt ¼ teaspoon black pepper 2 cups shredded mozzarella cheese 1 French baguette
Roll Ups Directions Mix the first 6 ingredients in a bowl until smooth. Spread over tortilla shell and sprinkle diced onions on the cheese mixture. Top with slice of turkey and lettuce roll tight and serve
Brochette Directions In a bowl toss together the tomatoes, basil, Parmesan cheese, and garlic. Mix in the balsamic vinegar, olive oil, salt, and pepper. Serve on toasted bread slices.
