Ghoulish Gingerbread S’mores

Servings: ~12-16 sandwiches, depending on the size of your cookie cutters
Prep Time: 15-20 minutes
Cook Time: 8-10 minutes

Ingredients:

For the Gingerbread Cookies:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg


For the Filling:

  • Mini marshmallows
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Optional: Edible black or green gel icing (for decoration)

Instructions:

Make the Gingerbread Cookies:

  1. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
  2. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy.
  3. Add the molasses and egg, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight).


Roll and Cut the Cookies:

  1. Preheat your oven to 350°F (175°C).
  2. On a floured surface, roll out one disc of dough to about 1/4 inch thickness.
  3. Use spooky cookie cutters (like ghosts, bats, or pumpkins) to cut out shapes and place them on a baking sheet lined with parchment paper.
  4. Bake for 8-10 minutes, or until the edges are firm. Let them cool on a wire rack.


Assemble the Cookies:

  1. Once the cookies are completely cooled, take one cookie and place a few mini marshmallows on the flat side.
  2. Drizzle a bit of caramel sauce over the marshmallows.
  3. Top with another cookie, pressing down gently to create a sandwich.


Decorate:

  • Use edible gel icing to draw spooky faces or designs on the cookie tops. You can make ghostly faces, spider webs, or other fun Halloween motifs!


Serve:

  • Arrange your Ghoulish Gingerbread S’mores on a festive platter and enjoy!
