Grilled Corn and Avocado Salad

Serving Size: 6 servings
Ingredients:
4 ears corn, husked
1 tablespoon olive oil
1 large avocado, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1/2 teaspoon chili powder
Salt and pepper to taste
Instructions:
Brush corn with olive oil and grill over medium heat for 8–10 minutes.
Cool corn, then slice kernels off the cob.
In a bowl, combine corn, avocado, red onion, and cilantro.
Add lime juice, chili powder, salt, and pepper.
Toss gently and serve immediately or chilled.
