Maple Bacon Pancake Muffins

Maple Bacon Pancake Muffins

Prep Time: 15 minutes
Cook Time: 20 minutes
Serving Size: 12 muffins

Ingredients:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon sugar
3/4 cup buttermilk
1/4 cup maple syrup
1 egg
2 tablespoons melted butter
4 slices cooked bacon, chopped

Instructions:
Preheat oven to 350°F and grease muffin tin.
In a bowl, mix flour, baking powder, baking soda, salt, and sugar.
In another bowl, whisk buttermilk, maple syrup, egg, and melted butter.
Combine wet and dry ingredients; fold in chopped bacon.
Divide batter into muffin tin and bake for 18–20 minutes until golden.
Cool slightly and drizzle with extra maple syrup if desired.
