Ingredients:
4 eggs
1/4 cup vegetable oil
1 cup matzo meal
1/4 cup water
1 teaspoon salt
1/2 teaspoon garlic powder
8 cups chicken broth
3 carrots, sliced
2 celery stalks, sliced
1 small onion, chopped
Fresh dill for garnish
Instructions:
In a bowl, mix eggs, oil, matzo meal, water, salt, and garlic powder. Chill 30 minutes.
Meanwhile, bring broth to a boil, then reduce to simmer. Add carrots, celery, and onion.
Form chilled mixture into 1-inch balls and drop into simmering soup.
Cover and cook for 30-40 minutes, until matzo balls are puffed and cooked through.
Garnish with dill and serve.
