Mini Pita Pizzas

Servings: 6 mini pizzas (2 pizzas per serving, for 3 servings)
Prep Time: 10 minutes
Cook Time: 10-12 minutes

Ingredients:

  • Whole wheat pita bread (6 mini pitas)
  • Tomato sauce (1/2 cup)
  • Shredded mozzarella cheese (1 cup)
  • Assorted toppings (bell peppers, mushrooms, cherry tomatoes, olives, cooked chicken or pepperoni)
  • Italian seasoning or dried oregano (1 teaspoon)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Assemble Pizzas: Place mini pitas on a baking sheet. Spread a thin layer of tomato sauce on each pita. Sprinkle with shredded mozzarella cheese and add your desired toppings.
  3. Season and Bake: Sprinkle with Italian seasoning or dried oregano. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  4. Cool and Pack: Allow the mini pizzas to cool slightly before packing in a lunchbox.
