Spicy Peanut-Coconut Dip

It is spicy and pea nutty, and is perfect as a dipping sauce.

Ingredients:

Puree 1/2 cup unsweetened coconut cream
1/2 cup peanut butter
2 tablespoons low-sodium soy sauce
1 tablespoon each sambal oelek (Asian chili sauce)
1 tablespoon rice vinegar
1 tablespoon honey
2 teaspoons grated ginger
1/2 teaspoon kosher salt

Directions:

  1. Add all ingredients to a blender until smooth.
  2. Transfer to a bowl and top with chopped peanuts and cilantro; serve with cucumber and carrot sticks.
