Spring Vegetable Quiche (Crustless Option Available)

Prep Time: 20 minutes
Cook Time: 45 minutes
Serving Size: 6 servings

Ingredients:

6 eggs

1 cup milk or half-and-half

1 cup shredded Swiss or Gruyère cheese

1/2 cup asparagus, chopped

1/2 cup zucchini, diced

1/4 cup scallions, sliced

Salt and pepper to taste

Optional: 1 pre-baked pie crust

Instructions:

Preheat oven to 375°F.

In a bowl, whisk eggs and milk. Stir in cheese, veggies, salt and pepper.

Pour mixture into pie crust or greased pie dish.

Bake 40–45 minutes, until set and lightly golden.

Cool slightly before serving.
