Ingredients
2 teaspoons vegetable oil
1 medium onion diced
2 carrots peeled and chopped
1 clove garlic, minced
1 stalk celery, chopped
3 to 4 cups leftover turkey
2 teaspoons dried thyme
2 bay leaves
¼ teaspoon black pepper
8 cups chicken broth
Directions
Heat oil in large stock pot over medium heat. Add carrots, onions, celery and garlic and sauté 4 minutes. Add turkey, bay leaves, thyme, pepper and mix well. Next pour in chicken broth and bring to boil, reduce heat and simmer 10 minutes.
Other recommendations
You can also add a variety of other vegetables, if they are raw add them at the beginning, if they are cooked add them with the broth. You can also add noodles or diced potatoes to this recipe as well.
