Ingredients:
- 1 lb boneless chicken breasts, cubed
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Optional toppings: lime wedges, cilantro, shredded cheese
Instructions:
- In a large pot, cook chicken over medium heat until no longer pink. Remove and set aside.
- In the same pot, sauté onion and garlic until onion is translucent.
- Add back the chicken, along with beans, green chilies, chicken broth, cumin, and oregano.
- Bring to a boil, then simmer for 20 minutes.
- Season with salt and pepper. Serve with optional toppings.
