White Chicken Chili

Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 4

Ingredients:

  • 1 lb boneless chicken breasts, cubed
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: lime wedges, cilantro, shredded cheese

Instructions:

  1. In a large pot, cook chicken over medium heat until no longer pink. Remove and set aside.
  2. In the same pot, sauté onion and garlic until onion is translucent.
  3. Add back the chicken, along with beans, green chilies, chicken broth, cumin, and oregano.
  4. Bring to a boil, then simmer for 20 minutes.
  5. Season with salt and pepper. Serve with optional toppings.
