Stuffed Mushrooms: Quinoa-Feta

Quinoa is all the rage!

Mushroom Prep

Ingredients:

24 medium to large mushrooms


Directions:

Step 1: Preheat oven to 425 degrees. Remove the stems of mushrooms (save stems for a couple of the following recipes)

Step 2: Wipe the caps with a damp towel, then toss with salt and olive oil

Step 3: Arrange on a baking sheet and stuffed as directed. Bake until mushrooms are tender and filling is golden brown about 15 minutes.

Filling

Ingredients:

½ cup chopped scallions

½ cup walnuts

¼ cup chopped dill and parsley

1/3 cup crumbled feta

2 tablespoons chopped sun dried tomatoes

Directions:

Step 1: Cook ¼ cup quinoa as directed.

Step 2: Combine in a bowl scallions, walnuts, dill, parsley, feta and sun dried tomatoes. Step 3: Divide among the mushroom caps and bake.
