Mini Apple Cranberry Loaves

So good, you might just want to eat a whole loaf yourself.

Ingredients:

2 apples (about 1 cup)

1 ¼ cups flour

¾ cups sugar

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon baking soda

½ teaspoon cinnamon

½ teaspoon nutmeg

1 cup dried cranberries

2 eggs

½ cup vegetable oil

½ cup sour cream

1 teaspoon vanilla

Directions:

Step 1: Shred apples, squeeze dry. Whisk flour, sugar, baking powder, salt, baking soda, cinnamon, and nutmeg in a large bowl; add dried cranberries.

Step 2: In another bowl, whisk eggs, vegetable oil, sour cream, and vanilla; stir in the shredded apples.

Step 3: Fold the wet ingredients into the dry ingredients until combined, then divide the batter among 3 buttered mini loaf pans ( about 6 by 3 inched each).

Step 4: Bake at 350 degrees until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Let cool on a rack.
