If you like sushi, you’ll love this guacamole makeover! The creaminess of the avocado mellows the heat of the wasabi.
Ingredients:
1 teaspoon wasabi powder
3 avocados
2 limes
2 tablespoons chopped pickled ginger
1 tablespoon brine from the pickled ginger jar
1 finely chopped seeded jalapeno
3 thinly sliced scallions
3 tablespoons chopped cilantro
1 teaspoon kosher salt
Directions:
- Mix 1 teaspoon each wasabi powder and water; set aside 15 minutes.
- Scoop the flesh of the avocados into a large bowl and mash with a fork. Add the juice of the limes, pickled ginger, brine, jalapeno, scallions, cilantro and kosher salt.
- Add the wasabi mixture and stir to combine. Season with salt. Serve with rice crackers.
