Simple and delicious way to serve Artic char.
Ingredients
- 1 1/2 lbs cubed yellow waxy potatoes (such as Yukon gold)
- 1/2 cup warm milk
- 4 tbsp butter
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp capers
- 1 tbsp chopped parsley
- 1 tsp salt
- 1/4 tsp black pepper
- (4) 5oz Arctic char
- 5 lemon slices
- broccolini
Directions
- Place cubed potatoes in a saucepan and cover with lightly salted water. Simmer 20 minutes, until tender.
- Drain and mash with 1/2 cup warm milk, 2 tbsp butter, 3/4 tsp salt and 1/4 tsp black pepper.
- Meanwhile, season pieces of Arctic char with 1/4 tsp salt and a pink of black pepper and top each with a lemon slice. Broil 6 minutes.
- In a small saucepan, melt 2 tbsp butter and 1 tbsp each olive oil, lemon juice, capers and chopped parsely. Drizzle sauce over fish and serve with potatoes and steamed broccolini.
