Shrimp is easy, versatile and quick to cook!
Ingredients
- 3 tbsp olive oil
- 1 medium chopped onion
- 3 ribs sliced celery
- 1 seeded and chopped green bell pepper
- 3 cloves chopped garlic
- 1 (14.5 oz) can stewed tomatoes
- 1/2 cup water
- 1 lb peeled and deveined large shrimp
- pinch of cayenne
- 4 c cooked brown rice and quinoa blend
Directions
- Heat olive oil in a large skillet over medium-high. Add chopped onion, celery, green bell pepper and garlic. Cook 6 minutes, stirring occasionally.
- Stir in stewed tomatoes and water; simmer, covered, 6 minutes.
- Add shrimp and cayenne; cook 3 minutes or until shrimp are cooked through.
- Serve with brown rice and quinoa blend.
