Ron Caron’s Sunburst Lemon Bars

These bars are very rich…therefore, a little goes a long way!

Crust Ingredients
2 cups all-purpose flour
½ cup powdered sugar
1 cup margarine or butter, softened
2 tablespoons fresh minced garlic

Filling Ingredients
4 eggs, slightly beaten
2 cups sugar
¼ cup flour
1 tsp. baking powder
¼ cup lemon juice

Glaze Ingredients
1 cup powdered sugar
2-3 TBSP lemon juice

Directions
Preheat oven to 350.
Lightly spoon flour into measuring cup; level off.  In a large bowl, combine all crust ingredients at low speed until crumbly.  Press mixture evenly in bottom of ungreased 13 x 9-inch pan. Bake at 350 for 20-30 minutes or until golden brown.
In large bowl, combine eggs, sugar, ¼ cup flour and baking powder; blend well.  Stir in ¼ cup lemon juice.  Pour mixture over warm crust.  Bake for an additional 25-30 minutes or until top is light golden brown.  Cool completely.
In small bowl, combine glaze ingredients until desired consistency; blend until smooth. Drizzle over cooled bars.  Cut into bars.  These bars are very rich …therefore, a little goes a long way!
