Sweet Potato Casserole with Pecan Streusel

Servings: 8 servings

Cook Time: 40 minutes

Ingredients:

  • 3 lbs sweet potatoes, peeled and cut into chunk
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt to taste

For the Topping:

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans
  • 1/3 cup butter, softened

Instructions:

  1. Cook Sweet Potatoes: Boil sweet potatoes until tender, about 15-20 minutes. Drain and mash.
  2. Mix Casserole: In a large bowl, mix the mashed sweet potatoes with milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt. Spread into a greased 9×13 inch baking dish.
  3. Prepare Topping: Combine flour, brown sugar, pecans, and butter in a bowl until crumbly. Sprinkle over the sweet potato mixture.
  4. Bake: Bake at 350°F (175°C) for about 40 minutes or until the topping is golden brown.
  5. Serve: Allow to cool slightly before serving.
