Arctic Char with Lemon Butter Sauce

Simple and delicious way to serve Artic char.

Ingredients

  • 1 1/2 lbs cubed yellow waxy potatoes (such as Yukon gold)
  • 1/2 cup warm milk
  • 4 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp capers
  • 1 tbsp chopped parsley
  • 1 tsp salt
  • 1/4 tsp black pepper
  • (4) 5oz Arctic char
  • 5 lemon slices
  • broccolini

Directions

  1. Place cubed potatoes in a saucepan and cover with lightly salted water. Simmer 20 minutes, until tender.
  2. Drain and mash with 1/2 cup warm milk, 2 tbsp butter, 3/4 tsp salt and 1/4 tsp black pepper.
  3. Meanwhile, season pieces of Arctic char with 1/4 tsp salt and a pink of black pepper and top each with a lemon slice. Broil 6 minutes.
  4. In a small saucepan, melt 2 tbsp butter and 1 tbsp each olive oil, lemon juice, capers and chopped parsely. Drizzle sauce over fish and serve with potatoes and steamed broccolini.
