A pleasant, simple salad for summertime weeknight cooking.
Ingredients
- 1/2 lb orzo
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 3/4 tsp garlic salt
- 3/4 tsp black pepper
- 1 lb beefsteak tomatoes
- 4 oz fresh mozzarella
- 1 small sliced sweet onion
- 1/4 cup sliced basil
- 1 1/4 lbs boneless sirloin
Directions
- Cook orzo following package directions. Drain and cool.
- Whisk olive oil, lemon juice and 1/4 tsp each garlic salt and black pepper. Stir into orzo.
- Add beefsteak tomatoes cut into chunks, fresh mozzarella cut into cubes, sliced sweet onion and sliced basil.
- Season boneless sirloin with 1/2 tsp garlic sat and 1/4 tsp black pepper.
- Grill or broil 4 minutes per side for medium-rare. Slice and serve over orzo.
