Blueberry Maple BBQ Sauce

Ingredients: 1 Tbsp olive oil 1 cup red onion 1 seeded jalapeno pepper 4 cloves minced garlic ¼ cup bourbon 2 cups blueberries ½ cup ketchup 2 Tbsp maple syrup 2 Tbsp cider vinegar ¼ tsp grated nutmeg 1/8 tsp allspice

Directions: In a skillet heat 1 Tbsp. olive oil over medium heat. Add 1 cup finely chopped red onion; cook and stir 5 minutes. Add 1 seeded, finely chopped jalapeno pepper and 4 cloves minced garlic; cook and stir 1 minute. Remove from heat. Stir in ¼ cup bourbon. Return to heat; bring to a boil. Meanwhile, in a bowl use a potato masher to slightly mash 2 cups blueberries. Stir blueberries, ½ cup ketchup, 2 Tbsp. maple syrup, 2 Tbsp. cider vinegar, ¼ tsp. grated nutmeg, and 1/8 tsp. allspice into skillet. Bring to boiling; reduce heat. Simmer, uncovered, 20 minutes or until thickened. Transfer to a blender and blend until smooth.
