This this the classic Cajun dish! While this recipe calls for everything to be mixed, it can be served over a scoop of white rice instead of all together.
Ingredients:
2 teaspoons olive oil
1 pound boneless skinless chicken breast cut into small pieces
8 ounces andouille sausage
1 onion diced
½ cup diced celery
1 green pepper diced
2 tablespoons chopped garlic
¼ teaspoon cayenne pepper
½ teaspoon onion powder
2 cups uncooked white rice
4 cups chicken stock
3 bay leaves
2 teaspoons worcestshire sauce
1 teaspoon hot pepper sauce
salt and pepper to taste
Directions:
Heat oil in a large pot over medium heat. Sautee chicken and sausage until brown. Stir in onion, bell pepper, celery and garlic. Season with cayenne, onion powder, salt and pepper. Cook about 5 minutes. Add rice then stir in chicken stock and bay leaves. Bring to a boil then reduce heat, cover and simmer about 20 minutes or until rice is tender. Stir in Worcestershire and hot pepper sauce.
