Creamy Tuscan Chicken Pasta

Ingredients:
- 2 boneless, skinless chicken breasts, sliced
- 8 oz penne or fettuccine pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions:
- Cook pasta according to package instructions and set aside.
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add garlic and sun-dried tomatoes and cook for 1 minute.
- Stir in heavy cream and Parmesan, simmering until slightly thickened.
- Add spinach and cooked pasta, tossing until combined.
- Return chicken to the skillet and heat through before serving.
Pro tip: Finish with extra Parmesan and cracked black pepper for a restaurant-style touch.
