Creamy Tuscan Chicken Pasta

Cook Time: 25 minutes
Serving Size: 4 servings

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz penne or fettuccine pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach
  • Salt and pepper to taste

 

Instructions:

  1. Cook pasta according to package instructions and set aside.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat and cook chicken until golden and cooked through. Remove and set aside.
  4. In the same skillet, add garlic and sun-dried tomatoes and cook for 1 minute.
  5. Stir in heavy cream and Parmesan, simmering until slightly thickened.
  6. Add spinach and cooked pasta, tossing until combined.
  7. Return chicken to the skillet and heat through before serving.

 

Pro tip: Finish with extra Parmesan and cracked black pepper for a restaurant-style touch.
