Game Day Queso Dip

Game Day Queso Dip

Prep Time: 5 minutes
Cook Time: 10 minutes
Serving Size: 6–8 servings

Ingredients:

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 cup diced canned green chiles (drained)
  • Salt to taste
  • Optional: diced tomatoes, jalapeños, or cooked chorizo

 

Instructions:

  1. In a medium saucepan, melt butter over medium heat.
  2. Whisk in the flour and cook for 1 minute to form a roux.
  3. Slowly whisk in the milk and continue to stir until the mixture thickens (about 2–3 minutes).
  4. Reduce heat to low and add cheddar and Monterey Jack cheeses, stirring until melted and smooth.
  5. Stir in garlic powder, onion powder, chili powder, paprika, and green chiles.
  6. Add salt to taste, and mix in any optional toppings like chorizo or jalapeños.
  7. Serve warm with tortilla chips.

 

Pro tip: Keep warm in a small crockpot during the game for nonstop dipping.
