Game Day Queso Dip

Ingredients:
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup whole milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp smoked paprika
- 1/4 cup diced canned green chiles (drained)
- Salt to taste
- Optional: diced tomatoes, jalapeños, or cooked chorizo
Instructions:
- In a medium saucepan, melt butter over medium heat.
- Whisk in the flour and cook for 1 minute to form a roux.
- Slowly whisk in the milk and continue to stir until the mixture thickens (about 2–3 minutes).
- Reduce heat to low and add cheddar and Monterey Jack cheeses, stirring until melted and smooth.
- Stir in garlic powder, onion powder, chili powder, paprika, and green chiles.
- Add salt to taste, and mix in any optional toppings like chorizo or jalapeños.
- Serve warm with tortilla chips.
