Irish Cheddar Potato Bites

Ingredients:
- 1 lb baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded Irish cheddar cheese
- 3 slices cooked bacon, crumbled
- 2 tbsp chopped green onions
- Sour cream for serving
Instructions:
- Preheat oven to 400°F.
- Toss potatoes with olive oil, garlic powder, salt, and pepper.
- Spread on a baking sheet and roast for 20–25 minutes until tender and crispy.
- Top with shredded cheddar and bacon.
- Return to oven for 3–5 minutes until cheese melts.
- Garnish with green onions and serve with sour cream.
Pro tip: Sprinkle a little extra cheddar right before serving for an extra cheesy finish.
