Jerk Chicken Burgers with Fresh Mango Salsa

Bring home the flavors of the Caribbean with these Jerk Chicken burgers, served with fresh and spicy mango salsa.

(serves 4)

Ingredients

For the burgers:

  • 1 lb. ground chicken
  • 1 teaspoon Tamari sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon allspice
  • 1/2 teaspoon dried basil
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon crushed red pepper
  • ½ teaspoon garlic powder
  • ½ teaspoons salt
  • ½ teaspoon brown sugar
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground black pepper
  • Drizzle of extra-virgin olive oil
  • Lettuce leaves for garnish
  • Gourmet burger bun or ciabatta roll

For the salsa:

  • 1 ripe mango, peeled and diced
  • 1 small red bell pepper, seeded and diced
  • ¼ cup of red onion, diced
  • 2 tablespoons fresh cilantro leaves, chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 large lime, juiced
  • ¼ teaspoon salt, to taste

Directions

  1. Build a medium-hot temperature fire in a charcoal grill or heat a gas grill to medium-high. Brush grill grate with olive oil.
  2. While grill heats, combine ground chicken, Tamari sauce, spices, and brown sugar in a large bowl. Drizzle in a small amount of olive oil. Mix well to combine. Gently shape into 4 patties.
  3. Place patties on the grill and cook for 8 minutes and flip over. Grill for approximately 5 minutes more, or until the burgers reach an internal temperature of 165 degrees. There should not be any pink in the middle.
  4. While the burgers are on the grill, make the mango salsa. In a small bowl, combine the mango, red pepper, red onion, cilantro, and jalapeno. Season with salt. Drizzle with lime juice to taste. Set aside and let sit for at least 10 minutes before serving.
  5. Serve burgers on a gourmet burger bun or ciabatta roll with lettuce and a heaping spoonful of mango salsa.
