Low-Country Shrimp

Shrimp is easy, versatile and quick to cook!

Ingredients

  • 3 tbsp olive oil
  • 1 medium chopped onion
  • 3 ribs sliced celery
  • 1 seeded and chopped green bell pepper
  • 3 cloves chopped garlic
  • 1 (14.5 oz) can stewed tomatoes
  • 1/2 cup water
  • 1 lb peeled and deveined large shrimp
  • pinch of cayenne
  • 4 c cooked brown rice and quinoa blend

Directions

  1. Heat olive oil in a large skillet over medium-high. Add chopped onion, celery, green bell pepper and garlic. Cook 6 minutes, stirring occasionally.
  2. Stir in stewed tomatoes and water; simmer, covered, 6 minutes.
  3. Add shrimp and cayenne; cook 3 minutes or until shrimp are cooked through.
  4. Serve with brown rice and quinoa blend.
