Pasta with Turkey Meatballs

Ingredients: Kosher salt 12 ounces medium shell noodles 1 bunch broccoli florets 8 ounces sweet Italian turkey sausage with out casing ¼ cup extra virgin oil 4 cloves diced garlic Pinch of red pepper flake Ground pepper ½ cup grated ricotta or Parmesan cheese

Directions: Step 1: Bring a large pot of water to a boil. Add pasta and cook until done. Add broccoli and continue to boil for 2 minutes then drain. Step 2: Meanwhile, roll the sausage meat into about 20 small meatballs. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the meatballs and cook turning occasionally, until browned and cooked through, 5 to 6 minutes. Drain on paper towel. Step 3: In a skillet add 3 tablespoons olive oil, garlic, red pepper and salt. Cook about 1 minute then add the pasta, broccoli and meatballs. Step 4: As pasta continues to heat up add more oil if needed as well as salt and pepper, top with cheese. Serves about 4 people.
