Peanut Butter Holiday Mice

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda

Ingredients:

  • Peanuts, split in half (for ears)
  • M&M’s (for noses)
  • Miniature semisweet chocolate chips (for eyes)
  • shoestring licorice, cut into 2-inch pieces (for tails)

Instructions:

  1. In a mixing bowl, beat the peanut butter, butter, and sugars until smooth. Add the egg and vanilla, blending well.
  2. In a separate bowl, whisk together the flour and baking soda. Gradually mix into the peanut butter mixture until fully combined (dough will be soft). Refrigerate for about 1 hour, or until firm enough to shape.
  3. Preheat oven to 350°F. Shape the dough into 1-inch balls, tapering one side to create a mouse shape. Place cookies 2 inches apart on ungreased baking sheets.
  4. Add peanut halves for ears, M&M’s for noses, and chocolate chips for eyes.
  5. Bake for 8-10 minutes or until set. While warm, carefully insert licorice pieces for tails. Transfer to wire racks to cool.
