Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
Ingredients:
- Peanuts, split in half (for ears)
- M&M’s (for noses)
- Miniature semisweet chocolate chips (for eyes)
- shoestring licorice, cut into 2-inch pieces (for tails)
Instructions:
- In a mixing bowl, beat the peanut butter, butter, and sugars until smooth. Add the egg and vanilla, blending well.
- In a separate bowl, whisk together the flour and baking soda. Gradually mix into the peanut butter mixture until fully combined (dough will be soft). Refrigerate for about 1 hour, or until firm enough to shape.
- Preheat oven to 350°F. Shape the dough into 1-inch balls, tapering one side to create a mouse shape. Place cookies 2 inches apart on ungreased baking sheets.
- Add peanut halves for ears, M&M’s for noses, and chocolate chips for eyes.
- Bake for 8-10 minutes or until set. While warm, carefully insert licorice pieces for tails. Transfer to wire racks to cool.
