Ingredients:
- 3 lbs sweet potatoes, peeled and cut into chunk
- 1/2 cup milk
- 2 eggs, beaten
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
For the Topping:
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/2 cup chopped pecans
- 1/3 cup butter, softened
Instructions:
- Cook Sweet Potatoes: Boil sweet potatoes until tender, about 15-20 minutes. Drain and mash.
- Mix Casserole: In a large bowl, mix the mashed sweet potatoes with milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt. Spread into a greased 9×13 inch baking dish.
- Prepare Topping: Combine flour, brown sugar, pecans, and butter in a bowl until crumbly. Sprinkle over the sweet potato mixture.
- Bake: Bake at 350°F (175°C) for about 40 minutes or until the topping is golden brown.
- Serve: Allow to cool slightly before serving.
