Sweet Potato Fries

Ingredients:
2 medium sweet potatoes
½ cup panko breadcrumbs
1 teaspoon ground cumin
1 teaspoon paprika
1 tablespoon extra-virgin olive oil
1 large egg white
Kosher salt

Directions:
Step 1: Put a baking sheet in the oven and preheat to 425 degrees. Combine the panko, cumin, paprika, olive oil and 1 teaspoon salt in a small bowl.

Step 2: Whisk the egg white in a medium bowl until frothy. Peel and cut the sweet potatoes into ¼ inch sticks and toss until coated, then add the panko mixture and toss.
Step 3: Spread the sweet potatoes on the hot baking sheet and sprinkle with any remaining crumbs from the bowl. Bake until the fries are tender and crisp about 25 minutes.
