Apples aren’t just for dessert! Crisp apples and sharp cheddar give juicy chicken breasts the perfect balance of savory and sweet, while a simple maple-Dijon glaze adds even more fall flavor.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 medium apple, thinly sliced
- 1 cup shredded sharp cheddar cheese
- 2 tbsp Dijon mustard
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F.
- Carefully cut a pocket into the side of each chicken breast without slicing all the way through.
- Stuff each chicken breast with apple slices and shredded cheddar cheese.
- Season the outside of the chicken with garlic powder, thyme, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2–3 minutes on each side.
- Whisk together Dijon mustard and maple syrup and brush the mixture over the chicken.
- Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
- Allow to rest for 5 minutes before serving.
