Creamy Loaded Potato Salad

A cookout classic with crispy bacon, cheddar cheese, and green onions, this potato salad is always the first side dish to disappear.

Ingredients

  • 3 lbs baby potatoes, halved
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 3 green onions, sliced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until fork tender, about 12–15 minutes.
  2. Drain and allow potatoes to cool slightly.
  3. In a large bowl, mix mayonnaise, sour cream, garlic powder, salt, and pepper.
  4. Fold in potatoes, cheddar cheese, bacon, and green onions.
  5. Refrigerate for at least 1 hour before serving.
  6. Garnish with additional bacon and green onions if desired.
