Loaded Sweet Potato Nachos

Ingredients:
- 2 medium sweet potatoes, thinly sliced into rounds
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled jalapeños
- 1/4 cup chopped red onion
- Sour cream and chopped cilantro for topping
Instructions:
- Preheat oven to 400°F.
- Toss sweet potato rounds in olive oil, salt, and pepper.
- Bake on a parchment-lined sheet for 20–25 minutes, flipping halfway.
- Layer with black beans, cheese, jalapeños, and red onion.
- Return to oven for 5 minutes, or until cheese is melted.
- Top with sour cream and cilantro before serving.
