Red, White & Blue Potato Salad with Blue Cheese

Ingredients:
1 lb baby red potatoes
1 lb baby Yukon gold potatoes
1 lb baby purple potatoes
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup crumbled blue cheese
2 tablespoons apple cider vinegar
1/2 teaspoon garlic powder
Salt and pepper to taste
2 green onions, sliced
Instructions:
Boil potatoes until fork-tender, 12–15 minutes; cool and halve.
In a bowl, whisk sour cream, mayo, vinegar, garlic powder, salt, and pepper.
Fold in potatoes and blue cheese.
Garnish with green onions and chill before serving.
