Apple & Cheddar Stuffed Chicken

Apples aren’t just for dessert! Crisp apples and sharp cheddar give juicy chicken breasts the perfect balance of savory and sweet, while a simple maple-Dijon glaze adds even more fall flavor.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 medium apple, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Carefully cut a pocket into the side of each chicken breast without slicing all the way through.
  3. Stuff each chicken breast with apple slices and shredded cheddar cheese.
  4. Season the outside of the chicken with garlic powder, thyme, salt, and pepper.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2–3 minutes on each side.
  6. Whisk together Dijon mustard and maple syrup and brush the mixture over the chicken.
  7. Transfer the skillet to the oven and bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Allow to rest for 5 minutes before serving.
