A cookout classic with crispy bacon, cheddar cheese, and green onions, this potato salad is always the first side dish to disappear.
Ingredients
- 3 lbs baby potatoes, halved
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 3 green onions, sliced
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Boil potatoes in salted water until fork tender, about 12–15 minutes.
- Drain and allow potatoes to cool slightly.
- In a large bowl, mix mayonnaise, sour cream, garlic powder, salt, and pepper.
- Fold in potatoes, cheddar cheese, bacon, and green onions.
- Refrigerate for at least 1 hour before serving.
- Garnish with additional bacon and green onions if desired.
