Ingredients:
- 4 boneless, skinless chicken breasts or thighs
- 1 lb baby potatoes, halved
- 2 cups baby carrots
- 1 small zucchini, cut into thick slices

- Juice and zest of 1 lemon
- 1 tsp dried Italian seasoning

Instructions:
- Place the potatoes and carrots in the bottom of the slow cooker.
- Season the chicken with salt, pepper, and Italian seasoning, then place it over the vegetables.
- Mix the chicken broth, garlic, lemon juice, and lemon zest in a small bowl.
